Recipes for Recovery: Quinoa Salad with Vegetables

Excellent source of vitamin A from carrots. Vitamin A may promote vision, immune function, bone health, and cell integrity. Quinoa is a wonderful “recovery food” because it is an excellent source of protein as well as fiber, phosphorous, magnesium, iron and calcium. It’s also gluten-free and easy to digest. Folks in recovery enter their detox stage malnourished. Recovery foods and recipes help to improve the level of nutrition to support long term recovery.

Makes 4 serving(s)


1/2 cup quinoa
1 cup water
½ teaspoon kosher salt
1 cup cucumber, peeled and diced
1/2 cup carrot, peeled and diced
1/4 cup scallions, sliced
1 teaspoon cilantro, minced
2 tablespoons lemon juice
1/4 cup olive oil
½ teaspoon kosher salt
¼ teaspoon ground black pepper


1. Place quinoa in salted water and bring to a boil. Reduce to a simmer and cover, cooking ~15 minutes. Cool.
2. Add remaining ingredients and mix.
