Watermelon Salad

Here’s something refreshing to serve in this holiday season full of rich foods!

Watermelon Salad

Yield: 8 servings

Ingredients:
• 2 cups seedless watermelon, diced
• 1 English cucumber, diced
• 1 cup cherry tomatoes, halved
• 8 ounces feta cheese, crumbled or diced
• 2 scallions, chopped
• 1/3 cup mint, chopped
• ¼ cup white wine vinegar
• ¼ cup extra virgin olive oil
• ¼ teaspoon salt
• 1/8 teaspoon ground pepper

Directions:
1. Place watermelon, cucumber, tomatoes, feta, scallions, and mint in a bowl.
2. Whisk vinegar, oil, salt, and pepper together in small bowl.
3. Pour dressing over fruit and vegetables and toss.
