This Sunday’s recipe is Beet Cake! Delicious, nutritious, and simple. Enjoy!
1 pound beet noodles (or use a spiralizer and make your own out of a pound of beets – wash, peel, spiralize)
3 eggs, beaten
1/2 cup whole wheat breadcrumbs
1/2 cup walnuts, chopped (optional)
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup extra virgin olive oil
1/4 cup parsley, minced
sour cream or yogurt (optional)
1. Mix beets, eggs, breadcrumbs, walnuts, salt, and pepper in a bowl.
2. Heat pan over medium-high heat, add 1/2 the oil, form three cakes with half the beet mixture and add to the pan. Cook ~4-5 minutes on each side and place on paper towel to drain excess oil. Repeat with remaining beet mixture.
3. Sprinkle with parsley and serve with sour cream or yogurt.
