Baked Asparagus with Lemon

I love asparagus; to me, it tastes like Spring. Any way you cook it, I think asparagus is delicious. But by far my favorite way to cook asparagus? Baking, aka roasting. You have to try my Baked Asparagus with Lemon (without garlic or butter) –  a quick and easy recipe that pairs well with nearly any main dish and tastes glorious every time. 

Baked Asparagus with Lemon

Try it once and my baked asparagus recipe will become a staple in your weekly meal rotation. Roasting (or baking) vegetables is my go-to cooking method of choice. The best part? You only need a handful of ingredients and the flavor is always amazingly delicious!

Simply mix asparagus with extra virgin olive oil, salt, and pepper then bake until it’s the level of golden brown you like. This generally takes only 20 minutes, so it’s done quickly as well. Once you pull the baked asparagus out of the oven, just sprinkle zest and lemon juice on it, toss together, and voila! Your scrumptious baked asparagus side dish is done.

How to Store Asparagus

Asparagus should stay at least a week in the crisper drawer of your refrigerator if it is wrapped in a damp paper towel and a plastic bag. Another great way to keep asparagus fresh is to store it in a glass of water with a plastic bag over the top so that the stalks will continue to wick up water.

Baked Asparagus Nutrition

Asparagus is a good source of fiber, which helps our digestion and keep us regular. In particular, asparagus provides dietary fiber in the form of prebiotics, which helps feed the friendly bacteria found in our gut.

Asparagus is also a good source of antioxidants, which help protect your cells from oxidative stress and free radicals, which may contribute to chronic inflammation and a variety of diseases.

Baked asparagus is also a brain booster. It is a good source of folate, which works in conjunction Vitamin B12, found in fish, poultry, meat, and dairy, to help prevent cognitive decline.

What’s the Deal with Asparagus and My Pee?

Yes folks, sometimes when we eat a lot of asparagus we may notice a strong urinary odor. This is due to a unique compound in the asparagus that gives off a distinct smell. Not to worry, though, this is not harmful and most people may not even detect an odor!

Ingredients

  • 2 pounds asparagus bottoms trimmed
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Zest of 1 lemon
  • 2 tablespoons lemon juice

Instructions

  1. Preheat oven to 425 degrees F. Line baking sheet with foil or parchment paper.
  2. Place asparagus on baking sheet. Drizzle oil, salt, and pepper over top. Roast 15 minutes, move around, then roast another 15 minutes (until the level of golden brown and caramelization you like).
  3. Toss with lemon zest and juice.
