Ingredients

Artichokes:

  • 2 large artichokes

Aioli:

  • 1/4 cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 tablespoons chopped fresh herbs such as chives and/or parsley
  • 1 teaspoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic grated
  • Pinch of salt
  • Pinch of ground pepper

Instructions

  1. Cut stem off and trim about 1 inch off the tip of the artichokes with kitchen shears.
  2. Place 1 cup of cold water and a steamer rack in the Instant Pot pressure cooker. Place 2 whole artichokes on the steamer rack, and close the lid.
  3. Pressure cook on High Pressure for 8 minutes (using the Manual Button/Pressure Cook + Quick Release).
  4. While the artichokes are cooking, whisk Aioli ingredients together.
  5. Serve artichokes with aioli.
