Instant Pot Black Eyed Peas

Beans are very popular in my family. So much so that my daughter loves to have beans as a snack with her homemade vinaigrette! So, I wanted to share my favorite way to make beans – in the Instant Pot. I have for you my Instant Pot black eyed peas.

These Instant Pot black eyed peas impart a delicious umami (think savory) flavor that is rich and filling! Also, did you know that black eyed peas eaten on New Year’s Eve and New Year’s Day symbolizes good luck? Now is the perfect time to whip up some of these Instant Pot Black Eyed Peas.

Instant Pot black eyed peas are a breeze to make. All it takes is a quick sauté of the bacon in the Instant Pot. From there, you just add in the black eyed peas and vegetable stock, seal the lid and cook it on high pressure for 30 minutes. All that is left after that is releasing the steam and adding salt and pepper to taste. Simple, delicious, and perfect for your family and friends on New Year’s Eve! 

All About Black Eyed Peas

Black eyed peas are a type of pulse, which is defined by USA pulses as “the edible seeds of legumes.” There are four groups of pulses: dried beans, lentils, chickpeas, and dried peas. Although the name is deceiving, black eyed peas fall into the bean category. Another common name for black eyed peas is cowpeas. Recipes with pulses, like these Instant Pot black eyed peas, are great to include in your diet regularly.

Black Eyed Peas Health Benefits

The U.S. Dietary Guidelines recommend consuming 2.5 cups of vegetables per day, in which black eyed peas are a great choice! For one cup of black eyed peas, there are about 13 grams of protein and 11 grams of fiber. Additionally, a one-cup serving is a good source of zinc and potassium and an excellent source of folate, thiamin, iron, magnesium, phosphorus, copper and manganese. These nutrients help with the processes needed to create energy from macronutrients as well as keep our bones, muscles, digestive system, nervous system and blood healthy. These Instant Pot black eyed peas have a ton of nutrition to offer us!

Instant Pot Black Eyed Peas

Ingredients

  • 8 ounces bacon chopped
  • 1 pound bag black eyed peas
  • 6 cups unsalted vegetable stock or water
  • 1 teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Turn Instant Pot to Sauté and allow it to get warm. Add bacon and sauté bacon until brown, approximately 4 to 5 minutes, stirring occasionally.
  2. Add peas and stock to the Instant Pot and mix well.
  3. Close the lid, turn the valve to "seal," and set the Instant Pot to cook on manual high pressure for 30 minutes.
  4. Once the time is done, allow a natural release for 10 to 15 minutes then quick release any remaining steam.
  5. Add salt and pepper and mix well.
