Instant Pot Shredded Chicken
Sunday meal prep just got a whole lot better with my Instant Pot shredded chicken. I love the versatility of this recipe, which can be used in a variety of different ways. For instance, you can add it to my superfood spinach quinoa salad with pomegranate citrus dressing, tacos, or alongside my favorite side dishes like my turmeric cauliflower and my vegetarian pasta salad with dijon vinaigrette.
In addition to the variety of dishes you can add my Instant Pot shredded chicken to, you can also adapt the flavor profile to your liking! For this recipe I chose my favorite spices and ingredients to use, including chicken broth, garlic powder, onion powder, salt and pepper. However, depending on the flavors you like, you can switch it up!
All About My Instant Pot Shredded Chicken

This is such a simple recipe too. Just throw (well, not literally) all the ingredients in the Instant Pot. In 4 hours, you have delicious, melt-in-your-mouth chicken for the whole week!
Health Benefits of Instant Pot Shredded Chicken
Another reason to love this chicken recipe are its health benefits. One 3-ounce portion of chicken has about 23 grams of protein, and the chicken breast is a good source of niacin. The protein will help with the functions of cell tissue damage, as well as enzymatic processes in the body, while the niacin from the chicken breast will help with the production of energy for cells and keeping the skin, digestive tract and nerves functioning optimally.
Additionally, the Dietary Guidelines for Americans recommend about 5.5 ounce-equivalents of protein a day, and 26 ounce-equivalents a week of poultry, meat, and eggs. My Instant Pot shredded chicken is a great way to meet these recommendations.

Instant Pot Shredded Chicken
- 1.5 pounds skinless boneless chicken breasts and/or thighs
- ½ cup chicken stock
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Place all ingredients into Instant Pot.
Close lid, make sure valve is closed, press Manual for high pressure and set for 20 minutes. Once done, quick release pressure.
Remove chicken from Instant Pot. Shred chicken with 2 forks and place back in Instant Pot with liquid. Serve.
