Slider Recipes: Moroccan Chicken Sliders and Salmon Sliders

Just in time for Super Bowl Sunday, here are some fun, delicious and nutritious sliders to try!

Moroccan Chicken Sliders

Serves 4

Ingredients:

• 1 pound ground chicken
• 1 clove garlic, minced
• ¼ cup cilantro, minced
• 1 teaspoon fennel seed
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon kosher salt
• ½ teaspoon ground cinnamon
• ½ teaspoon cayenne pepper
• 1/8 teaspoon black pepper
• 1/2 teaspoon honey
• 1 cup whole wheat bread crumbs
• 1 cup whole milk
• 4 whole wheat slider buns (optional)

Directions
1. Combine all items in large bowl and gently mix.
2. Heat up a grill pan and spray with olive oil. Split mixture into 4 patties, grill 4-5 minutes on medium heat, flip and cook 4-5 minutes on other side.
3. Serve with mint yogurt, recipe below.

Mint Yogurt

Ingredients:
• 2 cups 0% plain Greek yogurt
• ½ cup mint, minced
• Juice of ½ lemon
• Zest of ½ lemon
• Pinch of salt

Directions:
1. Mix all of the above and let sit for 20 min.
2. Spread ½ bun with ~1 Tbsp finished mint yogurt.

Salmon Sliders

Serves 4

Ingredients:

Salmon sliders:
• 16 ounces canned wild salmon
• 2 large eggs, beaten
• 1/2 cup almond flour
• ½ teaspoon kosher salt
• 1 1/2 teaspoons toasted sesame oil
• 1 tablespoon fresh lemon juice
• 1 teaspoon grated ginger
• 1 tablespoon soy sauce
• 1 teaspoon honey
• 2 tablespoons mashed avocado
• 4 whole wheat slider buns (optional)

Aoli:
• 1/4 cup mayo
• 2 teaspoons sriracha or hot sauce
• 1 teaspoon fresh lemon juice
• Pinch salt

Directions:

1. In a mixing bowl, mash together salmon, eggs, almond flour, and salt. In another bowl, whisk together sesame oil, lemon juice, ginger, soy sauce, honey, and avocado. Add sesame oil mixture to salmon mixture and combine thoroughly.
2. Heat a skillet to medium heat and spray with olive oil. Scoop a tightly-packed 1/4 cup of salmon mixture and dollop into pan, then use fingers or a spatula to flatten to approximately 3/4 inch. Cook for 3 minutes until golden-brown and easily flipped with a spatula. Repeat on other side.
3. Remove from the pan and allow to rest 5 minutes.
4. Whisk Aoli ingredients together in a small bowl and serve with sliders.
