Why sweet potatoes versus regular potatoes? First of all, both are delicious and good for you! So pick either. I love the flavor of baked sweet potatoes a bit more than regular potatoes, so that’s just a preference. As far as nutrition, the orange-fleshed beauties have a ton of beta carotene (good for your eyes!) and Vitamin C.

  • 4 medium sweet potatoes scrubbed
  • Cheddar cheese shredded
  • Sour cream
  • Plain Greek yogurt
  • Chopped chives
  • Steamed broccoli
  • Anything else you like!


  1. Preheat oven to 400 degrees F. Wrap each potato individually in foil and place on rimmed baking sheet. Cook for ~1 hour until tender when pierced with a knife.
  2. Split potatoes and fluff inside with a fork.
  3. Serve potatoes with all the fixings! Mix and match however you like.
