Why sweet potatoes versus regular potatoes? First of all, both are delicious and good for you! So pick either. I love the flavor of baked sweet potatoes a bit more than regular potatoes, so that’s just a preference. As far as nutrition, the orange-fleshed beauties have a ton of beta carotene (good for your eyes!) and Vitamin C.
Sweet potato ‘bar’
- 4 medium sweet potatoes scrubbed
- Cheddar cheese shredded
- Sour cream
- Plain Greek yogurt
- Chopped chives
- Steamed broccoli
- Anything else you like!
Preheat oven to 400 degrees F. Wrap each potato individually in foil and place on rimmed baking sheet. Cook for ~1 hour until tender when pierced with a knife.
Split potatoes and fluff inside with a fork.
Serve potatoes with all the fixings! Mix and match however you like.
