Whole Wheat Dutch Baby Pancake

My Dutch Baby Pancake is one of my best kept secrets. This warm and fluffy breakfast looks elegant in its presentation, but in reality is very simple to make (so easy, even the kiddos can do it). I also love how you can adapt the Dutch Baby Pancake to your taste buds, making it sweet or savory. I can guarantee that this Dutch Baby Pancake will be one of your best kept secrets too! 

Dutch Baby Pancake

In just about 30 minutes from start to finish, you will have this beautiful and delicious Dutch Baby Pancake. If the kiddos are taking part, have them do a quick mix of the eggs, flour, milk, cream, and salt. Be careful not to over mix – that will over develop the gluten, creating a tough pancake. Once the mixing is done, parents can take the wheel, transferring the skillet to and from the oven. The Dutch Baby Pancake is great for a holiday breakfast, sleepover treat, or any ol’ Sunday. 

So what is a Dutch Baby Pancake?

The Dutch Baby Pancake is synonymous with the German Pancake. According to an article by Cooks Illustrated, it is said that an American restaurant owner mispronounced “Deutsch,” coming up with the name Dutch. The article continues on, writing that the term “baby” came to be because the size of the pancakes were small. However, this recipe makes a pancake that is enough to feed a family of four! As for the pancake itself, I would describe the Dutch Baby Pancake as a crossover between your typical pancake and a crepe. It has an incredibly fluffy interior and crispy edges with just a little hint of sweetness. 

Dutch Baby Pancake Variations

The great thing about this recipe is that the base of the pancake stays the same, but the toppings can change the flavor profile. Some of my favorite toppings for the Dutch Baby Pancake are seasonal fruit, powdered sugar and maple syrup. If I am in more of a savory mood, I like to add a fried egg, bacon and veggies. I love that this Dutch Baby Pancake uses whole wheat flour. Whole wheat is a type of whole grain, which offers many benefits to our health. It is recommended by the Dietary Guidelines for Americans that half of our grains daily (~3 ounces out of 6 ounces a day) be whole grains. When an item says “100% whole wheat” it means that the bran, endosperm and germ of the grain kernel are still in tact. Look for the label below when purchasing whole wheat (or whole grain) products.

Whole wheat contains nutrients like B vitamins, protein, fiber, manganese, selenium, magnesium, and phosphorus. Although each of these nutrients have different jobs, consuming these nutrients in whole wheat products can help to reduce risk of chronic diseases like cardiovascular disease, cancer and diabetes. The fact that the Dutch Baby Pancake uses whole wheat pastry flour makes it that much better!

Whole Wheat Dutch Baby Pancake

Ingredients

  • 5 eggs beaten
  • 1 cup whole wheat pastry flour
  • 2/3 cup whole or 2% milk
  • ¼ cup heavy cream
  • ½ teaspoon kosher salt
  • 3 tablespoons unsalted butter

Instructions

  1. Preheat oven to 425 degrees F.
  2. In a bowl, mix together eggs, flour, milk, cream, and salt.
  3. In a 12-inch oven-safe skillet over medium heat, add the butter and melt. Pour the batter into the hot skillet and transfer to the oven.
  4. Bake until the dutch baby pancake puffs up around the edges and turns golden brown, 20 to 25 minutes.
  5. Serve with jam, fruit, maple syrup, and plain yogurt.
